Today I Wish to talk about Kombucha. Which is obviously entirely unrelated to those Banana Oatmeal Cookies, but I understand you won't mind.

Based on this response, an individual would believe I would stay far away from Kombucha, right? I suggest, after all, it certainly comes with a vinegary tang.

However, for whatever reason, I keep trying it. I want to like it SO DANG BAD.

YIELD: about 30 biscuits PREP TIME: 10 minnutes COOK TIME: 10 minutes



1/2 cup unsalted butter, at room temperature

1 cup packed light brown sugar

1 large egg

3/4 cup mashed ripe bananas (about 2 medium)

1 1/2 tsp pure vanilla extract

1 cup pops flour

1 teaspoon baking soda

1 teaspoon salt

2 teaspoons ground cinnamon


Preheat oven to 350°F. Line baking sheets with parchment paper.

In the bowl of a stand mixer fitted with the paddle attachment, or in a big bowl using an electric mixer, beat the butter and sugar till light and fluffy, about 3 minutes.

Scrape down the sides you can look here of the bowl and blend in the egg until fully incorporated. Scrape the sides of the bowl and add the skillet and vanilla.

Gently add the the flour mixture to the banana mixture and blend until just blended.

Scrape down the sides of the bowl and then stir to recombine.

Use a moderate cookie scoop (about 1.5 tbsp ) to scoop the dough onto prepared cookie sheets leaving about 2 inches between each cookie.

Bake in preheated oven for 9-11 minutes.

Remove cookies from the oven and then lightly press the shirts of each cookie using the bottom of a drinking glass. Since these cookies do not spread much, this will give them a traditional cookie form.
